Indulge in the vibrant flavours of Meethe Chawal made with Organic India’s pure Jaggery. It’s sure to be the perfect centre-piece for your festive gatherings.

Ingredients:
1 cup red rice
Water (for cooking rice)
Coconut oil
Fresh coconut slices
Chopped almonds and cashews
1 cup jaggery powder
¾ cup water
Cardamom powder
Nutmeg powder
Cinnamon powder

Instructions:
Soak the red rice.
Cook the soaked rice in a pressure cooker with water for 5 whistles, or until done.
Heat coconut oil in a pan and roast coconut slices, almonds, and cashews until golden. Remove and set aside.
In the same pan, dissolve jaggery powder in ¾ cup water and cook until it forms a syrup (not too thick).
Mix the cooked rice into the jaggery syrup, ensuring it’s well coated.
Sprinkle in cardamom, nutmeg, and cinnamon powder; mix well.
Cover and simmer for 8-10 minutes to meld the flavours.
Serve warm, garnished with the roasted nuts!
